Why is the seal of the vessel important?
This seal makes sure that a layer of carbon dioxide accumulates on the surface of the juice while it's fermenting. This gas protects the juice from oxygen and other potential contamination during the fermentation process.

I had a hard time putting my cone seals on; do you have any suggestions?
We encourage you to practise putting the equipment together several times before you use it. Hopefully this will make the process easier.

My oak bag is interfering with the fermentation lock; is that okay?
No it isn't. If this happens, recheck your instructions for how to prepare the airlock and the oak pack. If you follow these steps carefully, the bag should not interfere with the lock.

My base rotator is out of balance. How can I fix it?
This does happen sometimes, since pieces of the base rotator may shift during shipping.

Follow these steps to reposition the base rotator:

  1. Make sure the 'wheel ring' is entirely within the 'circular track'.
  2. Place the base in front of you with the 'spigot indent' toward you and the 'lock mechanism' away from you. Make sure the lock is on.
  3. Hold the rotating disk (platform) with the 'dome' towards you and the protruding tongue (containing the lock slot) away from you.
  4. Angle the protruding tongue down, and slide it under the far edge of the base into the rotating slot space.
  5. The rotating platform should fall partway into the base; rotate it until the slots on the sides line up with the guide posts. The platform should fall all the way into position.
